Peanut Butter Cookies

1/2 cup butter or margarine
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1/2 tsp vanilla
1 1/4 cups flour

Beat butter and peanut butter for 30 seconds. Add the sugars, baking soda, and baking powder. Beat til combined, scraping sides of bowl occasionally. Beat in egg and vanilla till combined. Add flour, if necessary cover and chill dough til easy to handle. Shape dough into 1" balls. Roll in additional granulated sugar to coat. Place balls 2" apart on an UNGREASED cookie sheet. Flatten by making crisscross lines with fork tines. Bake at 375 for 7-9 minutes or until bottoms are lightly browned. It is better to undercook them so they are still soft. Cool on rack. (Makes about 30 cookies so if want a lot then double it) Mmmmm so good I have made these twice in the past two weeks =)

Ash and I made these in Dallas and added Reeses in the middle of them...so yummy.
